This coffee comes from a network of small family farms across San Francisco, Los Llanos, San Andrés, and El Sauce in San Ignacio, Peru. The farmers receive ongoing agronomic support to help ensure exceptional quality, and their farms are regularly evaluated for organic certification as part of the Asociación Agropecuaria de Productores del Norte program.
The main varieties grown include Catuai, Caturra, Bourbon, and Mundo Novo. Only fully ripe cherries are harvested, carefully floated and hand-sorted to remove imperfections. After de-pulping, the coffee undergoes a controlled 20–30 hour fermentation in tanks. It is then gently washed and dried slowly in shaded conditions to reach the ideal moisture level, preserving sweetness and complexity in the cup.
