This microlot is produced by Néstor Lasso at El Diviso, his family farm near Pitalito in Huila, Colombia. Néstor has become one of the best-known names in modern specialty coffee, recognised for his bold, expressive coffees and carefully controlled fermentation methods.
El Diviso has built an international reputation, with coffees from the farm appearing in competitions and being roasted by some of the world’s leading specialty roasters. Despite that success, it remains a family-run farm, combining generations of coffee-growing experience with a highly experimental approach to processing.
For this Ají lot, the whole cherries undergo a 48-hour anaerobic fermentation before being treated with a thermal shock. This involves rapidly changing the temperature of the coffee using hot and cold water, helping to halt the fermentation at a precise point and lock in the flavours developed during the process. The coffee is then naturally processed and dried in the sun for around 20 days, resulting in an intensely aromatic, fruit-forward and vibrant cup.

Incorrect or Damaged Orders
If you receive an incorrect or damaged order, please contact us within 48 hours of receiving your order. We will then arrange for the return of the goods and either replace the item or issue a full refund.
Changed Your Mind
If you have changed your mind about an item you have ordered, you can return it for a full refund within 14 days of receiving your order. Please note that the item must be returned in its original packaging and sealed.

Shipping Costs
You will be responsible for the cost of shipping the goods back to us. We recommend that you obtain proof of delivery from your shipping carrier, as we cannot be held responsible for goods lost or damaged in transit.
Refunds
Once we have received your returned item, we will process your refund within 14 working days. The refund will be issued to the original payment method used to place the order.

Coffee is roasted to order on Monday and Thursday for dispatch on the following day with Next Day Delivery
