The 'Las Gaviotas' project, named after the 'Chapoleras' (female pickers) whose white attire reminded them of seagulls, highlights the hard work and tradition of these farmers.
This coffee comes from 40 women, each managing farms between 1 and 5 hectares in the Pitalito, Saladoblanco, and Timaná regions of Huila. They cultivate mainly Castillo, Colombia, and Caturra varieties at altitudes of 1500-1600 meters. The association, led by Ana Gloria Rodriguez, is committed to quality and sustainability.
The coffee is processed using a washed method. Ripe cherries are hand-picked, floated to remove defects, and then pulped. A 12-hour fermentation follows, and the beans are then sun-dried on raised beds for 15 days, achieving the perfect moisture level.
These women are not just growing coffee; they're building a better future. Their association focuses on finding new markets and increasing their income, while also implementing sustainable practices to combat climate change. This coffee reflects their meticulous work, from carefully selecting the cherries to the precise drying process.
