Finca El Zapote, nestled in the Apaneca-Ilampatepec region of El Salvador, is a testament to the passion of three friends: David, Sigfredo, and Manuel. Their coffee trees, aged 5 to 10 years, thrive in the fertile volcanic soil of the Chalchuapa municipality.
This specific lot showcases meticulously selected bourbon varietals. After hand-picking, the beans journey to the Beneficio San Rafael mill, strategically positioned at 1450 meters above sea level between the peaks of El Pilon and Cerro Aguila. Here, they undergo a rigorous washing and floating process, followed by careful sun-drying on beds for 25-30 days. Meticulous hourly turning ensures consistent drying, maximizing the inherent qualities of the bourbon beans.
Beyond the farm itself, El Zapote boasts a unique microclimate thanks to its sheltered location between two mountain ranges. This protects the coffee from harsh winds and fosters ideal conditions for growing high-quality specialty beans. Additionally, its proximity to Parque Nacional El Imposible enriches the environment with vibrant biodiversity and contributes to clean, fresh air.
