This Marshell coffee is the result of a meticulous selection process, with only the best cherries hand-picked and sorted to ensure quality. The coffee underwent a dry fermentation of 28 days, followed by thorough washing to remove all mucilage, and was then sun-dried for 15 days - resulting in flavours of apricot, milk chocolate and caramel.
Alejandro Pedilla cultivates this unique lot on his 7-hectare farm in La Copia, Cajamarca, at 1,850 meters above sea level. The region's fertile volcanic soil, cold climate, and warm, rainy days create ideal conditions for high-quality coffee. Alejandro’s attention to detail and dedication to post-harvest processing highlight the excellence of the Marshell variety — a rare mutation of Bourbon discovered in 2016, known for its high yields, resilience, and exceptional cup quality. This variety has placed in the top five of multiple Cup of Excellence competitions, a testament to its remarkable character.
