San Agustin Passionfruit Co-Ferment, Colombia
This coffee is the result of an innovative collaboration with San Agustín Coffee Producers and features a blend of Caturra and Castillo varieties. Cherries are harvested at peak ripeness and undergo a 24-hour pre-fermentation in plastic bags, followed by a second 24-hour fermentation in cherry.
Once depulped, the coffee enters sealed tanks for a 5-day anaerobic co-fermentation with dehydrated passion fruit, allowing it to absorb intense tropical character. This process enhances the natural acidity and aromatic complexity of the coffee while layering in bright, juicy fruit notes.
After fermentation, the beans are mechanically dried over 10 days under carefully controlled conditions to achieve even drying and flavour stability. A final 5-day rest period allows the coffee to completely stabilise.
The result is a stunningly expressive coffee with flavours of candied passion fruit & pink lemonade - balanced by gentle sweetness and a clean, refreshing finish.
